All our grapes are transported from the vineyard in refrigerated trucks and enter the cellar at 6ºC.
Not every grape is good enough for our wines, so we are really strict at this stage of the process. Once in the cellar, the grapes are put through a double sorting table.
Fermentation and barrels
For fermentation we use only indigenous yeasts, selected by us in our Bosque. The fermentations are always very slow and at a controlled temperature.
At Bosque de Matasnos we can boast of having one of the most ambitious stocks of barrels in the Ribera. We personally select the wood and we look for the right "terroir" of Quercus forest to best express each of our soils and varieties.
Sourced from the best professionals in the world, all our corks are high quality, 100% natural cork. We select them one by one. Twice.-
